Sometimes called Mongolian barbecue, this dish of grilled lamb or mutton with vegetables is known as ‘Genghis Khan’ (jingisukan) by the Japanese and is considered a soul food of Hokkaido. Instead of a flat grill inset in the middle of the table, a special dome-shaped grill is used. Not only does it pair well with Sapporo beer, jingisukan is a popular choice for social gatherings, and locals commonly barbecue it outdoors while camping or viewing the cherry blossoms.
