Nikko-yuba Nikko-yuba

Visitors to Nikko should try a local specialty, ‘yuba’, or tofu skin. Made by collecting the top layer of boiled soymilk, yuba can be eaten soft and fresh much like sashimi, or dried and used in cooking. The smooth, silky texture is sure to please, and it is a healthy and delicious dish too!
